You will need:

2 cups (227g) All-Purpose Flour

4g Baking Powder

25g Olive Oil

2/3 cup (152g) Pizza Sauce

1 cup (113g) Grated or Shredded Sharp White Cheddar Cheese

1/2 cup (57g) Grated or Shredded Smoked Provolone Cheese

1/2 cup (57g) Grated or Shredded Swiss Cheese

King Arthur Pizza Seasoning or Dried Italian Herbs

Directions
Preheat and Prepare: Preheat the oven to 500°F. Lightly grease two 12" round pizza pans or baking sheets.
Make the Crust: In a bowl, combine flour, baking powder, salt, olive oil, and 6 tablespoons of water. Mix until cohesive. Divide the dough in half, shape each into a flat disk, and let it rest for 10 to 15 minutes if time allows.
Roll Out the Dough: Cut two pieces of parchment paper (about 12" square), or use waxed paper or plastic wrap. Place one dough ball on the paper and top with another sheet. Roll the dough very thinly, 1/8" thick or less.
Assemble Pizzas: Place the rolled-out pizzas on the prepared pans. Top each pizza with 1/3 cup (76g) of pizza sauce. Mix the cheeses and spread half over each pizza. Sprinkle lightly with Pizza Seasoning or dried Italian herbs.
Bake: Bake the pizzas for 9 to 11 minutes, until the cheese is melted and beginning to brown, and the edges and bottom of the crust are golden brown.
Serve: Remove the pizzas from the oven, transfer to a rack to cool briefly, cut into squares, and serve hot.
