Light a hot fire inside the burning chamber of the wood-fired oven.
Spread the coals across the floor of the oven.
Place the stainless grill over the hot coals.
Slice the sausage lengthwise being careful not to cut all the way through.
Open the cut sausage which will allow more of the surface to be caramelized.
Place the sausage and the bratwurst on the hot grill.
Slide the meat in the oven and place it over the hot coals.
Make sure to keep a close eye on the coals, as they may flame up due to dripping of grease.
The sausage is ready when both sides are nicely caramelized; altogether about 20 minutes.
