Cajun Crawfish Calzone Recipe

It's peak crawfish season so our partner Russell Jones of Smoky Ribs BBQ combined the little delicious shellfish with the classic calzone using our Mangiafuoco oven. And we officially love the unique mix of ingredients! Check out his own dough recipe below that you can use with any filling. Dough Recipe

600 grams of high gluten flour (recommend a bread flour with 55% hydration)

330 grams of water

15 grams olive oil

15 grams sugar

6 grams instant yeast

12 grams salt
