After being shaped, the stones are air-dried and fired in a wood-fired kiln, giving them their characteristic terracotta color. The result is a stone with exceptional heat retention and moisture absorption, capable of cooking a Neapolitan pizza at 850°F for 60-90 seconds without burning the bottom. All Fontana Forni wood-fired pizza ovens have a bent-steel dome construction for maximum stability and durability. Our stainless steel and powder-coated painted surfaces are specially treated for long-lasting corrosion resistance.
Each Fontana oven features a full 12 centimeters of insulation around the cooking chamber, for maximum heat retention; this makes our oven exteriors safe to the touch.
