And I bout the hybrid one - I was thinking once in a while ( seldom) I will use wood but mostly gas ( also I converted it to NG) - but now I have this since a while and can say with a house NG quick connect I did not use wood at all ( only once) the oven is quick hot ( yes still wait for the stones to pick up) the cooking results are great - I love this oven"

The perfect oven for light entertaining

"This is exactly what I was looking for in an oven. I had a larger wood-fired oven in the past, which was great, but I needed something that offered more flexibility but still the same high quality results. We typically host 4-6 people and this oven is great for that. If you are hosting for large groups and want tight spacing in pizzas, you would want a larger oven. The flexibility to do wood (flavor) and gas (convenience) is fantastic. We have done pizzas, roasted carrots, focaccia, eggplants for baba ganoush, potatoes and more, I highly recommend this oven and spend a lot of time with different foods when you first get it, play with temperature, door position and for breads, hydration levels. This is not a question…it’s a review of my pizza oven I bought 5 years ago!!!Nest investment EVER!!! We bought the margarita now Napoli oven and it’s literally member of the family…we have pizza parties all the time and even cook other things!!! Cannot recommend it enough. This family knows how to serve their customers!!! Worth every penny. Period. Now I’m going to go make some pizza dough.: Thank you! we are so glad you are loving it. What are the considerations for the countertop version? What temperature will the outdoor counter it rests on be required to tolerate?: All of our ovens are certified to only need 1 inch of air space from combustibles, so they can be placed on any non-combustible countertop, as long as the feet that come with the oven are installed. Can you start with gas and heat up oven and start wood with heat from the gas?: We would not recommend doing that.
Can you use wood chips or pellets to give smoke flavor with the gas.: We don't recommend using pellets or wood chips in the oven. When you're cooking at such a high temperature, it will not affect the flavor.
