Delicious Fluffy Cathead Biscuits
Southern biscuits were exactly what I was craving when I found this enticing recipe on Epicurious.  Curiosity took the best of me when I discovered they used buttermilk powder instead of liquid buttermilk; therefore, I was instantly intrigued by the process.  Who knew there was such a thing as buttermilk powder? Â

Directions:
Preheat the oven to 400°F checking it with the infrared thermometer. Â
Combine the buttermilk powder, baking powder, salt, and sugar in a large bowl.
 Wisk the dry ingredients together.Â
Add two cups of water, whisking in the dry ingredients.
Once everything has been thoroughly mixed, add the lard and butter.
Add 2 cups of flour, stir the ingredients with a fork until it looks like crumbs.
Press the lard and butter against the side of the bowl with a fork, forming flattened, irregular pieces.
Gently stir in the 1 1/2 -2 cups flour, half cup at a time, until a wet dough forms.

With a wooden spoon combine all ingredients.
Once the flour has been incorporated you are ready to transfer it on the table.
Place the wet dough on a well-floured surface.
Scrape out the remaining dough from the bowl.
Dust the top of the dough with additional flour.
Carefully knead the dough into itself until it is no longer sticky.
Make sure you do not over knead.
With a dough cutter, divide the dough into equal pieces.
Dip or sprinkle cut sides with flour.
Gently roll the dough into a ball with your hands.
Place each ball side by side in a buttered cast-iron skillet.
Set the cast-iron skillet in the oven which has been preheated to 400°F, covering the biscuits with a lid in order for the biscuits not to brown too quickly on the surface. You can easily measure the temperature of the oven with an infrared thermometer.
After 15 minutes take the lid off of the skillet.
Spread melted butter over the top of the biscuits. This will allow the biscuits to brown nicely. Bake for ten more minutes.
The biscuits are now ready to be pulled out of the oven.
Spread some additional butter over the top of the biscuits.
The biscuits are nice and hot, perfect for a drizzle of honey butter!
I used my brother's raw honey that he harvested from his honey bees.
Simply soften the butter and drizzle the honey on it.
Combine honey, butter and a pinch of salt if you are using unsalted butter.
Mix until creamy.
There is nothing better than the aroma of freshly baked biscuits drizzled with honey butter.
