A Taste of the Mediterranean: Tepsi Kebab in the Fontana Oven
Rated 5.0 stars by 1 users
If you're looking for a new dish to add to your outdoor oven rotation, look no further than Tepsi Kebab - a traditional baked meat dish from Southern Turkey that’s as beautiful as it is satisfying. Rustic, rich, and full of Mediterranean flavor, this one-pan meal is perfect for cool evenings, casual gatherings, or even a midweek family dinner.
What makes it special? Everything bakes together in one dish - the meat, the aromatics, and a silky tomato sauce - and the result is savory, tender, and deeply flavorful. Best of all, the Fontana oven brings out an unmatched depth in the caramelized edges of the meat and roasted vegetables.
You will need:
- 500g (1.1 lb) ground beef or lamb (or a mix of both)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 handful parsley, finely chopped
- 1 red bell pepper, finely chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- ½ tsp red pepper flakes (pul biber)
- Optional: 1 tbsp tomato paste

Directions
1. Prepare the meat mixture
In a large mixing bowl, combine the onion, garlic, parsley, red bell pepper, salt, pepper, cumin, red pepper flakes, and tomato paste (if using).
Add the ground meat and mix everything thoroughly by hand until well combined.
2. Shape it into the pan
Transfer the mixture into a round baking pan and press it evenly across the surface.
Flatten the top and gently score the meat into 8 slices (like a pie), which will help with even cooking and make serving easier.
3. Add your toppings
Place a tomato slice and green pepper half on top of each section, alternating colors for a classic presentation.
4. Make the sauce
Whisk the tomato paste, water, and salt together until smooth, then pour the sauce evenly over the meat mixture
5. Bake in the Fontana oven
Place your pan into the preheated Fontana Forni oven at low heat (around 375°F / 190°C) and bake for 15–20 minutes, until the meat is fully cooked and the vegetables are tender and slightly blistered.
Serve and Enjoy!
