Roasted Beet Salad with Mixed Greens and Goat Cheese

Recipe:

A perfect and colorful symphony of flavors is created when simply tossing a medley of fresh greens with roasted beets, goat cheese and candied nuts.  Drizzle everything with an orange and raspberry vinaigrette, and the most delicious, fresh, and healthy meal is ready in no time at all.  Let's get started!

Supplies:

 Ingredients: 

  • 1 box mixed greens
  • 300 grams Roasted Beet Salad
  • 60 grams Candied Pecans or walnuts 
  • 1 apple, sliced (sprinkle with lemon juice to keep from oxidizing) 
  • 300 grams canned mandarines - 11oz can
  • 250 grams strawberries 
  • 100 grams goat cheese - we used honey goat cheese
Dressing: 
  • 60 grams orange juice
  • 65 grams olive oil - about 5 Tablespoons
  • Some fresh lemon juice
  • 15 grams red wine vinegar - about 1 Tablespoon
  • 20 grams raspberry preserves 
  • Salt to taste 

Directions:  

  1. Preheat The Mangiafuoco Home Gas Pizza Oven to 400°F - 200°C and roast the beets.
  2. Preparing the dressing is done in no time at all.  Whisk all the ingredients listed above in a bowl while slowly adding the olive oil until well emulsified. 
  3. Wash the strawberries and apples and slice to your liking. 
  4. When ready to serve, arrange the mixed lettuce on a large serving dish and toss with the dressing.
  5. Arrange the sliced fruit and the mandarines over the top, the candied walnuts or candied pecans, as well as the goat cheese.  
  6. Finally arrange the diced beets over the salad and serve immediately.  Enjoy!
