About Peposo Pots
Peposo, a peppery Tuscan beef stew, is the original slow-cooker dish. According to legend, it was created by the workers making the tiles for Brunelleschi’s famous dome in Florence; they put beef shank, red wine and lots of black pepper into terracotta pots and let it cook to delicious, tender perfection while they worked. Peposo is still celebrated in Tuscany today, but you can use this pot with your Fontana oven to make any dish that requires long, slow, gentle cooking. Just be warned that the aromas may drive you crazy long before dinnertime.
